Camping recipe: Sesame chicken skewers

Getaway reader Tarryn Geyer shares her favourite camping recipe: easy and delicious marinated chicken, which goes exceptionally well with rice.

 

Sesame chicken skewers

Serves 4

  • 2 garlic cloves, peeled and crushed
  • 5 cm piece of ginger, peeled and grated
  • Juice of 3 limes
  • 2 tablespoons soy sauce
  • 800 g chicken thighs, deboned and cubed
  • 2 tablespoons peanut butter
  • 2 tablespoons runny honey
  • 2 tablespoons sesame seeds
  • 4 wooden skewers

 

Put the garlic, ginger, lime juice and soy sauce into a bowl and mix well. Pour a quarter of this marinade into a smaller bowl and set aside. Pour the remaining marinade over the chicken cubes. Cover and leave to marinate in the fridge (ideally for a couple of hours).

Soak four wooden skewers in water for 20 minutes before threading the chicken cubes onto them. Place the skewers onto a hot braai and grill for 10 minutes, turning regularly. Meanwhile, add the peanut butter and runny honey to the marinade you set aside earlier. Once the chicken is cooked through, brush the chicken skewers with the marinade, sprinkle some sesame seeds over them and keep grilling for a minute or two, while brushing more marinade onto them to get a sticky glaze.

 

Tip:
Prepare the marinade before you go camping and store it in an airtight container.
